Grapes Negroamaro and Primitivo
Cocoa, damson, coffee, eucalyptus and mint on the nose. Round, soft and powerful, a touch of earthy vegetal grip from the Primitivo, deep liquorice and sloe fruit, big sweet tannins, complex and long.
A new wine (first vintage 2014) made from a selection of the Cantina’s oldest and best vineyards. It is the first time that Negro Amaro and Primitivo have been blended equally and this has been made possible by advances in the quality of the Primitivo in the area. An ambitious wine which has a ripeness and precision of flavour.
The soils are clay with chalk and the vines trained using a traditional ‘alberobello’ or ‘bush-vine’ system which enforces that the vineyard must be worked by hand.
The harvest is in the middle of September and around eighty hectolitres are taken from each hectare. The grapes are crushed and fermented in lined concrete tanks, temperature control units can be dropped in from above the tanks and from the same position it is possible to submerge the cap manually.
The wine is ageing in tonneaux, mainly two or three years old, for between six and eight months.
