Erbaluce di Caluso DOCG
The name of the wine simply comes from the time that it spends in ‘egg’, thirteen months and the egg is made from concrete which is lined with an inert resin.
The wine is made from the local Erbaluce, grown on the tiny south facing Vigna Cavaina vineyard (a third of a hectare) which is at an altitude of four hundred meters. The soils are moraine with a high proportion of stones, the vines are trained using a traditional Trentino Pergola system.
The harvest is between the fifteen and twenty fifth of September, only selected fruit is used for this wine. After a soft pressing the must is given just over a day of cold maceration, after which half the juice is racked off into a concrete ‘egg’. The fermentation is with selected yeasts and the wine goes through a full malolactic conversion.
Extraordinary depth of lime, mineral and floral fruit, a powerful and precise wine.

The harvest was on thirtieth of September and the wine was bottled in September 2015

The grapes are picked by hand and transported the short distance to the winery in small boxes During this time the wine remains on the lees
