Col Sandago Wildbacher Sparkling Brut Rose

Wildbacher is the signature vine of Le Case Bianche (Col Sandago is the name reserved by owner Martino Zanetti for his favourite wines). The variety is originally from the Styria-Hungarian border and it makes extremely infrequent appearances in Italy. That said, there is an underlying obsession with Wildbacher at Case Bianche and through study and careful selection the vines are of an unusually high quality and quite unlike any other Wildbacher that I have experienced.
The Brut Rosé is from new vineyards planted on sweeping terraces below Case Bianche, they are at an altitude of 250m facing between south and south west, planted at a density of 6000 vines per hectare. Soils are clay and chalk on sandstone. The grapes are gently pressed and the fermentation begins on the skins before being drawn off to avoid excessive colour or tannin. The second fermentation is in an ‘autoclave’, a steel tank designed to withstand the pressures of creating sparkling wines at controlled temperatures, it takes around 90 days and this method is often referred to as charmat lungo.
The Brut Rosé Spumante was first created in 2006 when just 4000 bottles were released onto an unsuspecting market. Historically the Italians didn’t really drink pink and that is good because it meant we got a decent allocation which we sold immediately. In 2013 25,000 bottles were made and it sold out in a few months.
A superb aperitivo, lovely with smoked fish.
Delicate, fresh and alarmingly easy. Pale pink, laced with cherry and black forest fruits, a twist of bitters and a suggestion of fragrant rose. 12%
