Ciu Ciu Passerina Spumante AltaMarea
Passerina Vino Spumante Brut
A spumante made from the local passerina vine which is proving well suited to spumante (sparkling wines). The vineyards have been certified as organic since 2003, they are spur pruned and planted on medium clays over limestone at altitudes of around 280m. The harvest is manual and is usually in the first ten days of September.
Prior to fermentation the grapes are macerated at low temperatures to enhance the aromas, the must is then fermented at a controlled temperature using selected yeasts. The second fermentation is on the skins in a pressurised tank (Charmat Martinotti) for 25 days. The wine remains on the yeast (sur lie) for 3 months in total. Bottles are matured for a minimum period of 3 months before sold.
This year the wine spent 6 months on the lees and was bottled in a clear glass, the all round improvement is marked.
Passerina has a habit of straying deeply into the tropical spectrum, but is saved from such indignity when picked early, here the fruit is citrus with ripe pear and dried herb. It shows some real depth from well-judged contact with the yeast during the ageing. An original and lovely spumante. 12%
