Vigna del Cuc is a south facing vineyard that is home to a few hectares of old glera (balbi) vines whose limited production is reserved exclusively for this wine. It is made using a technique called 'Chamat lungo', where the wine rests on the skins for an extended period to maximise the flavours and the second 'spumante' fermentation is unhurried, this encourage a silky smooth moose and supremely elegant fruit.
Brut is the rarest, driest and most difficult style the achieve from the Prosecco vine, fortunately Lionello has been a master for as long as I can remember, finely honing this long standing house favourite over many, many years, it is the little black dress of Spumante – never out of style and always elegant.
This is an inviting fizz with apple and grapefruit flavours, lovely and dry on the finish. It achieves the tricky task of simple elegance with aplomb. Prosecco is forever young, it would be cruel to let it grow old, a joyous wine which brings a ready smile.
